Turkey-Cranberry Lettuce Rollups

 

Ready for a delicious and FAST throw-together lunch or dinner recipe?

 

It’s a great way to enjoy holiday leftovers … and it’s a little lighter than a full-on turkey sandwich!

 

TIP:  If you have some leftover fresh sage, chop up 1-2 leaves and sprinkle over the lettuce leaves before you roll them up (yum!).

 

Turkey & Cranberry Lettuce Rollups
(serves 1)

 

  • 2 large lettuce leaves, romaine or boston works great
  • 2 Tbsp cranberry sauce
  • 3/4 cup (6 oz) shredded or chopped cooked turkey, optionally heat it up
  • 2 Tbsp chopped pecans
  • (optional) 1-2 dashes of hot sauce

  

Spread the cranberry sauce over half of each lettuce leaf, and then top with turkey and pecans.

 

Fold over the lettuce leaves and wrap the ingredients inside.

 

Serve with some veggie soup for a nice warming meal.
